Coriander (cilantro, klopovnik) - how to grow and how it can be used in addition to gastronomy.
The birthplace of coriander is the Mediterranean, where it was cultivated for a thousand years before our era, so as you can see this plant has a long history. In ancient Hellas, Ancient Rome, Palestine, Babylon and India has long been known as a vegetable, spicy, essential oil and medicinal plant.
It has been cultivated since ancient times in some countries of Europe and America.
In our country is widely distributed as essential oil culture.
In the Non-Black Earth region it is not grown very much, although it grows well in amateur gardens and gives a lot of greenery.
Useful properties of coriander.
Young coriander leaves are rich in vitamin C (up to 140 mg per 100 gram of raw mass of coriander), carotene - 10 mg%, routine - 145 mg%.
They are used for use as an additive in salads, sauces, soups, as a seasoning for meat and fish dishes, sandwiches.
For flavoring bread and confectionery products, seeds are added. Lycors insist on coriander, prepare beer, preserve vegetables. Improves the taste of dishes from peas, beans, lentils, table beet. Greenery is used fresh until flowering.
After flowering leaves grow, but get the smell of crushed bugs, so coriander is sometimes called a bug.
It has coriander useful and healing properties that many herbalists use.

Also, coriander-coriander has painkillers, increases appetite and has a beneficial effect on digestion, choleretic, expectorant properties. Candied fruit destroys the unpleasant odor in the mouth.
In scientific medicine, coriander is a part of laxatives and antihemorrhoids. Helps prevent scurvy.
Biological features of coriander
Coriander - an annual herbaceous plant of the family of celery, forms a root rosette of leaves and an erect, cylindrical, branchy stem, sometimes with anthocyanin coloration, up to 120 cm.
The lower basal leaves have long petioles.
Whole, wither early.
The leaves on the stem are not the same. Lower on short petioles, and in the upper part of the stem - sessile. Twice the pinnately-dissected coriander leaves look like parsley leaves. Small flowers, white and pink, are collected in an umbrella. Flowering begins with a central umbrella, which ends the main stem, the other umbrellas bloom simultaneously.
Fruits are spherical double-seeded in diameter 2-7 mm with a strong aroma, yellow-brown color. Unripe seeds with an unpleasant odor. The flowers are cross-pollinated.
Vegetation period 110-125 days.
From sowing to the identification of shoots - two to three weeks.
After 25-40 days, stems are formed, the flowers appear after 16-20 days, and the fruits on them - on 13-18-th day from the onset of flowering, and on 19-23 day from the beginning of the formation of fruits they finally ripen.
Coriander cold.
Seeds begin to germinate at a temperature of 6 degrees Celsius, so shoots appear early in the spring. They can withstand the temperature drop down to 10 °With frost, and the young plants from 6-10 leaves - up to 16-18°C.
Optimum temperature for growth and development - up to + 22°C. High temperatures - more than 34 ° C - during flowering are unfavorable for plants and cause vapors, a change in odor.
Coriander is demanding of light.
Shading tightens the maturation, reduces the yield and the content of essential oil. To obtain seeds, it is necessary to sow only on a sunny site.
Cilantro is demanding on moisture.
For swelling of seeds, up to 120% of water is needed from their weight. The greatest need for moisture - from stalking to flowering, in the remaining periods is more drought-resistant.
It grows well on fertile soils. The best are chernozems, but can grow on different soils with a reaction close to neutral (pH (acidity of the soil) = 6,5-7,5). On heavy clay soils grow heavier, responsive to phosphorus and nitrogen fertilizers.
Technology of growing coriander (cilantro).
Despite its exoticism in the representation of many summer residents, the coriander grows readily on the site, I grew coriander in succession about 5 years, and I will say that in my experience the plant is very very unpretentious in care.
Planted always in the garden with greens, for which I choose a place on the site where most of the world and not far to go - so you can always go and pick at cooking.
I was given a lot of greenery, in the store for all the years of cultivation of coriander, I never used it as a seasoning or seed. I am adored when I add coriander to my pastries.
Reproduction of coriander occurs by seeds.
Sowed them early in the spring in the moist soil, which she had been preparing since the fall. At 1 m2 usually make 1 / 3 buckets of humus, according to 1 a teaspoon of superphosphate and potassium sulfate. Dredge the spade on the bayonet.
In the spring, lay out 1 a tablespoon of urea, pour the soil with a pink solution of potassium permanganate and sow the seeds scatterwise or in furrows in rows through 20-25 cm to a depth of 1,5-3,5 centimeter.
At 1 m2 for the production of greenery, cilantro seeds are sown from 2x to 2,5 gram of coriander seeds, and on seeds - 1,5-2 gram.
To obtain green seeds can be sown all summer with an interval of 7-15 days. Harvest in 35-55 days, so in one place you can grow two or three crops, using plots after the early crop. When re-seeding on 1 m2 make 1 tsp. superphosphate or nitroammophoski.
Caring for the coriander is common: during the vegetation the soil is kept in a clean, loose state, thin out the crops, leaving 6-9 centimeters between plants, since with a thicker arrangement they will be poorly planted, weak, and the yield low. Observe the moisture content of the soil, since during drying, early on comes the gunfire and the quality of the products deteriorates. When the seeds are ripe, watering is reduced.
Seeds are removed when 60% fruit is bitten. Plants cut, tied into bundles and dried in an attic, under a canopy, laying under them paper or cloth.
Clean better in the morning or in the evening, as in dry weather the seeds crumble. After a week, the seeds are threshed and purified. From 1 m2 you can get 100-150 g., they retain their germination capacity two to three years.
There are no regionalized vegetable varieties of this crop. To obtain greenery, use essential oil varieties of coriander (cilantro): Ray, Smena, Amber and local samples (populations).
