That's right, in a good table beet grown on your own beds. And it also produces excellent salads, caviar, kvass and much more.
I grow different varieties of beets: Bordeaux 237, Delicacy, Red ball, Cylinder. They attracted me with taste, bright dark red color, which is important for various dishes. My experience confirms that when forming beds, it is necessary to take into account the peculiarities of this culture: it is drought-resistant, does not tolerate waterlogging of the soil, light-loving, loves space. The optimum temperature for seed germination is 10 °.
5 basic rules for growing beets
At the beginning of my seed battles I filled a lot of cones. For the first time I planted this vegetable culture not in separate rows, but in a whole plantation of eight rows, with the distance between the rows at the width of the chopper.
In the extreme rows, the beets developed normally, and the internal plants were thickened and very shaded, they lacked space, the roots grew small, poorly developed. Having analyzed the mistakes made, I now adhere to the following rules:
I grow beets in the same place, but keep in mind that she loves the neighborhood with cucumbers, tomatoes, onions and cabbage. And he doesn’t tolerate beans - I don’t know why.

At the edges of the garden plot I make holes, between them the distance is somewhere 10 cm. In them I plant seeds, according to 2-3 pcs. to a depth of 3 cm. Such seeding facilitates the care of seedlings, and the need for thinning is eliminated.
I observe the timing of planting seeds: the end of April - the first decade of May, depending on the weather and temperature conditions, since the vegetable is heat-loving.
Early plantings (at temperatures up to 4-5 °) delay the germination time of the seeds. Worse, the plants quite quickly shoot and blossom, completing the process of root vegetable growth.

During the season I do not apply organic, as manure is periodically introduced for autumn plowing. Do not feed and mineral fertilizers: they provoke the aging process and the appearance of hard fibers in the juicy pulp.
Do not leave a large distance between the plants in the row, so that the fruits do not grow large. In this case, they will have to be subjected to a longer heat treatment, which reduces the useful properties of beets.
To scare off the pests of the bed, I sprinkle the ash wood ash on top.
Seeds of beet before sowing are compulsorily processed in ash solution (1 st.l for 0,5 l of water) overnight, and then I place them in a damp cloth before pecking white roots. In the holes or grooves I add the chopped chicken manure with straw (we have chicken at the dacha), I mix it with the ground.
Beets are rather unpretentious to growing conditions, observance of simple rules of agricultural machinery gives tasty, juicy fruits and a good harvest.
Each season I form combined beds of 2-3 crops. For example, in the rows of cucumbers (up to 1 m - 1 m 20 cm wide) a row of beets was sown; a section of cabbage on both sides fringed with beets (2 rows), and on the other two - celery; jointly sowed 3 crops in 2 rows: onions - carrots, onions - beets.
The result was positive, and the beds themselves turned out to be rather unusual.
Intensive growth of root crops occurs at the beginning of autumn. Here it is necessary to observe the balance.
On the one hand, do not rush with their cleaning, and on the other hand, do not delay, do not allow the first frosts. Before laying for storage, the tops are cut off near the very top, strong root crops are placed in bags (from sugar) with sand and taken out to the cellar.
Part of the beets is stored with potatoes. The best storage conditions are at a temperature of 3 ° and air humidity up to 90%. If these conditions are not met, a bucket of water can be placed in the cellar.
Until the spring beet is well kept. In early spring, I select healthy root crops of different varieties, which have good tails and which have already grown in the upper part, carefully planting them in the soil in order to get the seeds for a new planting year.
Now every year I have a perfect harvest of beets. I try not to allow previous mistakes in its cultivation.
Since I'm hypertensive, I often do caviar with garlic, salad with pickled cucumbers and onions, seasoned with corn oil, and, of course, beet kvass. It is tasty and useful for blood vessels, and hence for atherosclerosis, and for heart diseases, it helps to reduce pressure.

For winter storage, I grow late varieties of beets. They grow slowly and in comparison with early ripening varieties have more dense flesh, accumulate more solids, respectively, when stored slowly lose moisture and do not rot. The choice of varieties is now great, but not all of them grow well in my garden.
Gradually, through trial and error, I identified 3 varieties that grow well and are stored. In addition, the root crops of each variety differ in shape, so they are easy to sort.
Bordeaux 237 is a very old variety with round root crops, and now is not losing ground. We begin to choose beetroot for food already at the end of July, but root crops reach full size and ripeness only by mid-September and are stored until mid-winter.
Egyptian flat in form reminds turnips. It ripens late, in late September. With warm dry autumn, you can leave it on the patch until the middle of October, then it will keep fresh until the spring.
Mulatto - beets are very dark in color, without light stripes on the cut. The root crop is roundish from above, with an elongated conical tip. The pulp is very juicy and sweet, good in raw form.
When laying for storage, it is very important to select completely healthy root crops, without the slightest damage. I cut off the crop, leaving the petioles of length 1 cm. I store in boxes with birch sawdust, placing root crops in them vertically in one layer.

The main valuable qualities of beet gains in the last weeks of growth. Therefore, with its cleaning is better not to hurry. However, if you overeat the beets in the garden, it may become blocked or cracked, as I did a year ago. I waited until the autumn rains ceased, as a result of the oversaturation with moisture, the beet was cracked and poorly stored.
The optimal harvesting time is largely dependent on the variety. If the beet is ripe and planted in mid-May, it must be removed already in mid-July and early August. If the variety is mid-season, the harvesting period is shifted to the end of August. Late ripening is removed in September - early October, which is a bit late for our region. There is a great danger that beets will be spoiled by night frosts, so most of our gardeners (including myself) plant mid-ripening varieties.
I take the beetroot away in late August, as soon as it begins to turn yellow and the lower leaves die. With warm autumn can be removed a little later. But if September is hot, beets can become flabby.

If you grow beets by direct sowing of seeds into the ground, it is necessary to thin out the plants. In beets from one seed-glomerulus, several plants appear at once. This beauty is very responsive to fertilizing with nitrogen-containing fertilizers. But do not overdo it - with an excess of nitrogen in the root crops, hollows appear. At the end of July, replace nitrogen with potassium. In no case do not bring fresh manure for planting, beets will be clumsy and bitter in taste.
If you have sour plants on the soil, do not wait for a good harvest. The strongest root crops are obtained on alkaline soils. Of great importance is the culture-predecessor. Plant beets after potatoes, onions, cabbage.
The secret of growing smooth, succulent root crops in watering. Watering is necessary regularly, especially when the plants are very young and during the formation of root crops. Large breaks between watering can not be done, and for 3-4 weeks before harvesting, generally refuse irrigation.
To root sweet, 2-3 times a season, starting from the moment of root growth, do salt salting (a handful of salt on 10 l of water). In Yul water dilute a handful of salt and pour it beets.
