ORIGINAL SEASONS OF THE RIDGE
It tastes like sweet and sour, like Chinese sauce.
Pass the green gooseberry with orange through a meat grinder, add salt and sugar to taste (sugar is more than salt), bring to a boil and add wine or apple vinegar and a lot of garlic crushed in a garlic squeezer (all ingredients to taste). At this stage, the taste should be pleasant sweet and sour. Bring to a boil again and close in sterilized jars.

Tails for berries do not need to be removed, so this simple jam is prepared. And it turns out to be sparse, it's very tasty to add in tea and water and drink in the heat.
On 2,5 kg of gooseberries -1,3 kg of sugar (for sour gooseberries, for sweet can be less), 400 ml of water, 20 leaves of cherry.
Leave the leaves with water, bring to a boil and let it brew. Rinse the berries with infusion without leaves, bring to a boil and cook 10 min. Wipe through a sieve, add sugar and cook jam 1 h. Pour into sterilized jars, roll up and leave under the blanket to cool.
EMERALD BISCUIT
For this jam, a green gooseberry with a thick skin, like Green Bottle, is the best choice.
On 5 glasses of berries-7 glasses of sugar, 2 handful of cherry leaves.
Remove seeds (for example, a teaspoon cutlet) from berries (they must be hard, you can take not fully ripe). Cherry leaves put in water (2 glass), bring to a boil and immediately fill the berries of gooseberries (leaves do not remove). Let cool and take it to the refrigerator for the night.
The next day, drain the juice (leave berries and leaves), pour sugar and boil. Add the berries (peeling them off the leaves) and cook 15 min, the berries should become transparent green. For 2-3 mines until the end of cooking, add pieces of 10 fresh washed cherry leaves (they will already remain in the jam). Finished jam spread on cans and close.
On a note. Try this version of this jam: fill from the water and vodka in the proportion of 1: 1 (that is, fill it with berries and cook the syrup from it). Alcohol during cooking evaporates, so that "alcoholic" jam will not be, but the berries in such a filling are surprisingly strong and "luminous".

Polish infusion with honey and ginger
Aromatic, sweet and at the same time spicy spicy beverage can become the main decoration of the festive table. m
On 1 kg gooseberries -1 l vodka, 0,5 liters of liquid honey, 5-6 slices of fresh ginger by 0,5 cm thick, 2 vanilla pod (can be replaced with vanilla sugar).
Gooseberry put in a jar, just remember, add vanilla and ginger, pour vodka and leave for 3-4 weeks. Shake the bottle occasionally. Then pour the infusion, and in the remaining mass add fresh flower honey and leave for another 2 weeks. Honey syrup pour and mix with infusion, filter. The resulting drink insists another 3 a week. But now you can drink at last!
