SOYA - A GIFT OF FATE
My acquaintance with this famous in the food industry culture happened by chance. Once we drove with my spouse Valery across the expanses of our sunny Chuvashia, and the field sown by some strange plant caught my eye. Then we passed by, but the thought didn’t give me the peace of my head: what was it?
From a distance, it looked like beans, only the leaves, it seemed to me, were smaller. And now, after some time, fate again led us along this road, and this time Valera stopped at the “mysterious” field.
By that time, the plants had already dried up (it was the end of August), and small, fluffy pods had ripened.
Of course, I picked a few pods: the seeds inside looked like small, slightly flattened peas. Each contained two or three peas. I rarely met information about such a plant with you .. Having rummaged in its bottomless expanses, I found out that my stranger is soy!
Yeah! I hadn’t tried growing it yet, I thought, and immediately decided to conduct another garden experiment - to grow soy. In the spring, in addition to the beans collected from the field, she acquired seeds of the Delicious vegetable variety. And with the onset of stable heat (in mid-May) sowed soybeans as well as beans - in pre-watered furrows. The distance between the rows of 40 cm, between the beans in a row - 10 cm, buried by about 3 cm.
After the emergence of seedlings, the land around it was mulched to preserve moisture, and further care consisted only in regular watering.
Several times during the season, I combined watering with top dressing with a microbial solution of A.P. Bessaraba. And at the end of August, when soybeans dropped their leaves, and the pods became grayish in color, I harvested the first crop: from a bed of 0,5 square meters. m - about 1 kg of beans. I believe that my experiment was a success. Of course, this is much less than a bean crop from the same garden, but soy is much more healthy!
Soy is three times more protein and two times more fat than meat. At the same time, in it, as in all plant products, there is absolutely no cholesterol! But there are a lot of vitamins A, C, P, PP, group B. Soy protein contains a set of 20 essential amino acids, while low-calorie and easily digested.
Soy is ideal for people with diabetes, as the substances in it stimulate the synthesis of insulin in the body. In addition, it normalizes metabolism and reduces stress! Having received this information, I realized what a valuable gift fate presented me.

APPETITE BATTERIES FROM SOY
You ask, what to cook from soy? Yes, anything! Soybeans are used in food boiled, fried, stewed. Soups are made from beans, cereals and flour are made, which are added to baking. Even milk from soy can be made, and already from milk - and cheese (famous tofu!), And cottage cheese. You can also eat germinated soybean sprouts: they contain even more substances useful to the human body.
I cook minced soy. I soak the beans overnight in water, adding 1/2 tsp to it. soda. Then I wash and cook in salted water over low heat for 3-4 hours. I remove the pop-up husk with a slotted spoon. Then I drain the water, and pass the boiled soy through a meat grinder - the mince is ready.
Most often I cook from it patties. Here are the ingredients: 2 glasses of soya mince, 1 glass of mashed potatoes, 1 egg, salt, spices, finely chopped and lightly fried onions. I make cutlets, roll in breading and fry in sunflower oil. In taste, flavor and structure, everything resembles ordinary meat patties. You can also use minced meat to make pasta in a naval manner, replacing ground beef with soy. Try it, it is very tasty, and most importantly, useful! Yes, I forgot to write about the benefits of soy for the earth. At its roots, like all legumes, nodule bacteria inhabit the soil, enriching the soil with nitrogen. So from all sides soy is good and indispensable.

With the pop stars and the cinema, everything is clear: the opponents of a healthy lifestyle have only one argument here - money. Yes, money means a lot, but not all. Health is not for sale. Therefore, in the world (not in everything, of course) they eat meat, potatoes and pasta less and less - they are replaced by soy. And the matter is not even in appearance: soy helps to cope with such serious diseases as diabetes, hypertension, osteoporosis, gastrointestinal tract, blood vessels and heart problems. Somehow I accidentally bought soybean seeds at the market. I just wanted to eat her fried, as in childhood, when she grew up in the field behind the house. Since then, I grow it every year, allocating a large area.
Pre-soaked overnight and then roasted soybeans are very popular with my granddaughters. The smaller two-year-old Julia asks several times during the day: “Give me jays!” And this pleases, because not always what is good for health is tasty at the same time.
Maybe your kids will like my simple recipes too.
Toasted soy. Soak soybeans overnight, rinse with cold water and fry in a pan.
Soy sprouts. Soak the soybeans overnight, and in the morning put them in glass jars or on a damp cloth. Sprout grain in the dark. Remember that excess moisture will delay germination. Sprouts up to 5 cm long are eaten (they become so on the 4-5th day). This is especially appropriate in winter, when vitamins are so lacking.
I eat boiled sprouts or fry them with butter. From 400 g of grains, 1,5 kg of vitamin soy sprouts are obtained.
