August is the time of collecting eggplants, an exotic plant that has become commonplace for many gardeners. These fruits are very useful: they contain a whole set of vitamins and minerals necessary for our body, as well as a large amount of fiber - a kind of "broom" for the gastrointestinal tract.

I plant many eggplants of different varieties in the country: early ripe, mid-ripe and late ripe. Of course, their fruits ripen at different times. If you do not know exactly what grade your eggplant is, and are not sure when it is better to clean them, focus on the appearance of the fruit. The skin of ripe eggplant acquires a characteristic color - violet, purple or white, becomes elastic and shiny, the seeds turn white, and the flesh acquires elasticity. But the overripe fruit looks dull, the flesh becomes stiff and bitter. It is also impossible to remove unripened eggplants - although these vegetables belong to nightshade crops, they don’t want to reach the required condition on the windowsill, like tomatoes.
Eggplants do not ripen at the same time, approximately every 2-3 of the day you need to selectively harvest the fruits, whose appearance indicates their readiness. When cutting off the eggplants, you need to leave the stalk in 3-5. See. After picking the fruits, I wipe them with a dry cloth, but in no case am I washing.

If there are many unripe fruits left on the plants and frosts are expected, it is better to dig up the bushes with a lump of soil, transplant them into bulky pots and grow them in a warm room.
HOW TO PRESERVE THE CROP
I keep eggplants in the basement, but you can in any other cold, dark place. I put them on the floor so that they lay in one layer. After two weeks I check: those fruits that have remained intact, with firm pulp, wrapped in paper, laid out on straw and covered with a thick cloth. So I extend the shelf life by two months.
But if you are going to keep them fresh for not so long, the eggplants will be perfectly in the fridge for two weeks, staying fresh and tasty. Just make sure that they do not get the light that stimulates the production of solanine, which gives the pulp bitterness and is toxic to humans in large doses.

The problem of eggplant preservation during the winter can be solved by cutting and freezing the fruit. In the dishes they will be exactly the same as they have just been collected from the garden.
GETTING YOUR BACLAWN SEEDS
If the harvest of eggplants is pleased, I advise you to procure seeds from your own garden. I do it this way: I choose the most dense and large fruits. On one bush I leave ripe 2-3 good eggplant.
The rest of the fruit and, if there is, the flowers are removed. After full maturity, I cut the eggplants and put them in a warm place. After 7-10 days I cut them and highlight the pulp along with the seeds, which I put in a glass jar and leave it on the 4 of the day. After that, I rinse with water and dry for 14 days at an air temperature of 28-30 degrees. I keep such seeds no more than 5 years.
