OPTIMAL TIME FOR ROOT HARVESTING
Beetroot: in the northern regions - in early September; in the south - at the end of September
Carrots: in the northern regions - in the second half of August; in the south - in early September
Celery: in the northern regions - at the end of September; in the south - in the first half of October
Radishes: regardless of the region - in the second half of September
Daikon: depending on the variety - from the second half of September
Beetroot in early autumn - care
No later than 2-3 weeks before harvesting), feed the beets with salt (20 g per 10 liters of water, based on a bucket of solution per 1 sq. M.). After 4-5 days after salt feeding, add 10 g of potassium sulfate and superphosphate per 1 sq. M (10 g of each fertilizer per 10 l of water). Potassium sulfate can be replaced with ash - 300 g per 10 liters of hot water (insist until it cools down), per 1 square meter).
If the weather is dry, water the beet beds 1–2 times a week. After watering, be sure to loosen the soil.

Carrots in early autumn - care
Stop watering 15-20 days before harvesting, otherwise the carrot roots may crack.
To get the sweetest carrots, two weeks before harvesting, pour 350 g of sifted wood ash with a bucket of boiling water, let it brew until it cools, water the plants at the rate of 10 liters of infusion per 1 square meter of planting.
At the same time, spray the carrots over the leaves with a solution of boric acid (5-6 g per 10 liters of water, the powder must first be diluted in 1 tbsp. Hot water).
Celery in early autumn - care
To get strong and lying roots, loosen the soil in the aisles after each rain or watering. Water in a drought once a week at the rate of 7-8 liters of water per 1 square meter of garden. Remember that irregular watering will cause the celery to develop additional roots and the flesh to become loose. Stop watering a week before harvest.
At the beginning of September, after watering, sprinkle 15-20 g of superphosphate per 1 square meter in the aisles, close it into the soil with a flat cutter.
In mid-September, dilute the same amount of potassium sulfate in 10 liters of water, pour a bucket of solution per 1 square meter.
Radish in early autumn - care
Stop watering two weeks before harvesting.
At the end of August, feed the radish with potassium sulfate and superphosphate (10 g of each fertilizer per 10 liters of water).
After a week, pour 300 g of sifted wood ash with 10 liters of boiling water, let it cool and pour it out at the rate - a bucket of infusion per 1 square meter of soil.
If the roots are sticking out above the soil surface, poke them up.
Daikon in early autumn - leaving
To easily pull out the roots, sprinkle the soil very well with water 2-3 days before harvesting. By the way, after such watering, the crop will be better stored. In a drought, water the plants abundantly once every 5-7 days, before watering, pierce the soil between plantings with a pitchfork, this will help moisten the soil to the desired depth.
So that the roots do not turn green, huddle the daikon as soon as it begins to protrude above the surface of the garden.

The benefits of root vegetables
Daikon is high in fiber and vitamin C. In addition, it contains an enzyme that helps digest starchy foods. If you eat 100 g of fresh daikon per day, you will notice in a week that the work of the digestive tract has improved. In addition, the vegetable helps maintain healthy teeth, hair, and bones.
2-3 weeks before harvesting, feed the daikon with wood ash (sift the sifted powder in the aisles at the rate of 250 g per 1 square meter of the garden).
Beets are useful for the prevention of vitamin deficiency and scurvy. In case of anemia and loss of strength, it is advisable to eat 150 g of salad with fresh beets once a day.
If visual acuity decreases, drink 1 tbsp daily. freshly squeezed carrot juice. The course of treatment is 10 days. After a two-week break, repeat.

Feed the parsnips
Parsnip loves loose soil. Therefore, I do not forget to spud it after each watering or rain. If the soil becomes too hard, enough oxygen will no longer flow to the roots of the plants, and the roots will grow small. In addition, parsnips need moisture: in dry weather, the garden with this crop has to be watered once every 5-6 days. At the beginning of September, I definitely feed the root crops with a solution of mullein (1:10) or azofoska (South for 10 liters of water).

That the bottom of the carrots did not turn green, in September I often inspect the garden. If I find bare root crops, I huddle them. Only the tops should remain above the ground.
By the way, in cold weather with night frosts I cover the carrots with a spunbond. This allows you to protect the culture from freezing and accelerates maturation.

Recipes with your own root vegetables
CELERY IN MARINADE
I throw 1 tbsp into 1 liter of boiling water. salt and 1/3 tsp. citric acid. I put the marinade in a saucepan over low heat, after a couple of minutes I immerse the peeled, diced celery in it. Cook for 3-5 minutes, strain, let cool. I put them in sterilized half-liter jars, in each I throw 2-3 peas of black pepper. I fill everything with boiling marinade and sterilize for another 20 minutes. I roll it up, let it cool at room temperature. I store it in the cellar. This preparation is great for salads and vegetable soups.
DAIKON IN KOREAN
I rub 1,5 kg of peeled daikon on a coarse grater, mix with 4-5 cloves of garlic pressed through the garlic. I add 3,5 tsp. salt, 1,5 tsp. mustard seeds, 80 ml each of vegetable oil and rice vinegar (you can use 95% table vinegar). Season everything with 1 tsp. ground coriander and a pinch of ground black pepper. I let it stand under the lid for 2 hours, put it in sterilized jars, screw it with metal lids and leave it at room temperature for 2-3 days. Then I store it in the refrigerator or cellar.
BEET FOR WINTER FOR BORSCH
Beets (1 kg) are thoroughly washed, boiled for 20 minutes, dipped in cold water and cleaned. I rub it on a coarse grater, put it on sterilized half-liter jars, pour it with boiling brine (for 1 liter of water, 25 g of salt and 3 g of citric acid). I cover with boiled lids and sterilize for 30 minutes. I roll it up, let it cool at room temperature, store it in the cellar.
