    Will there be nitrates in beets?

    I feed the beets three times during the summer.
    The first time is two weeks after germination. I dilute 1 tbsp. urea in a bucket of water and water the beets at the root.
    In mid-June, I dilute a capful of potassium hydrohumate in a bucket of water. I pour out a bucket of solution for 3-4 linear meters. In August, I feed the beets with potassium monophosphate so that the root vegetables are sufficiently sweet and dense - 1 tsp. I dilute the powder in 10 liters of water.

    However, I read that during storage, some root vegetables accumulate nitrates and become dangerous. Is it possible to reduce the amount of nitrates in vegetables when cooking them?

      — This statement is true primarily for spinach and other leafy vegetables. As for root crops, when storing them, constant ventilation and a fairly low positive temperature should be maintained in the cellar. During such storage, the amount of nitrates in root vegetables does not increase, but, on the contrary, decreases by 30-50%. In addition, during cooking, some root vegetables (daikon, radish, rutabaga) must be peeled. And when cooking carrots and beets, about 30-40% of nitrates pass into the water.

      - It is undesirable to use prematurely germinated root crops for obtaining seeds. The fact is that they carry genes with a short storage period. The seeds obtained from such root crops will subsequently yield a crop that will also germinate ahead of time. There's nothing you can do - the laws of genetics.

      Therefore, it is better to take a few medium-sized root crops that do not show signs of germination. 1-5 months before planting in the garden, they need to be taken out of storage and planted in pots with soil. Their care is minimal - watering and maintaining the temperature at the level of +2 +15 degrees. It will be possible to plant plants in the garden when the average daily air temperature exceeds +20 degrees. Planting scheme - 5 × 50 cm. Plant care is normal - watering, weeding, top dressing. For the formation of larger seeds, it is necessary to leave one main stem on the plant, and remove the rest. Harvest when the "balls" with seeds turn brown. Cut the bush at the base and dry it with seeds for 50-2 weeks, then collect the seeds and dry them again (now in room conditions). Store in paper or cloth bags.
