WHAT PLANTS HAVE LOTS OF LYCOPINE AND ANTHOCYANES?
Recently, a lot of information has appeared in the scientific and popular science literature about vegetables with black flesh. And the demand for fruits of this color is really increasing every year. Among all plant foods with a huge variety of their color palette, it is black vegetables that are recognized as leaders in the amount of antioxidants they contain.

The more anthocyanins in the fruits, the more intense their color. They are easily and quickly absorbed into the blood and protect the body from free radicals that cause aging, heart disease and even rock.
Eggplant
The most famous black vegetable is eggplant. Its blue-brown-black peel is very rich in all kinds of pigments, and the pulp is rich in varieties of colorless antioxidants lycopenes, which slow down the aging process in the body and prevent male disease - prostate adenoma. All this makes "blue" very useful. Previously, eggplant was considered exclusively a southern plant. However, there are already varieties Black handsome and Long purple, which have proven themselves well under film shelters in Belarus. And the newest variety Amethyst is generally a champion in terms of the content of lycopenes and other useful substances.
Black tomatoes and peppers
Do not lag behind in usefulness and black tomatoes. They differ from the red ones we are used to with a denser skin, due to which they are stored longer. They have a more pronounced taste, which is associated with a higher concentration of acids and sugars in them. The fragrant fruits are rich in vitamins, especially C and A, which help maintain and improve vision, as well as the more powerful antioxidant lycopene. Black tomatoes have a beneficial effect on the functioning of the cardiovascular system and normalize blood pressure, increase immune properties, protecting against colds. Most varieties of these tomatoes, like other black vegetables, can be successfully grown in mid-latitude climates.
At present, seeds of varieties with dark-colored pulp De Barao black are on sale in the distribution network. Gypsy, Curiosity, Darkie.
All of the above is true for sweet peppers. Seed material of black vegetable variety Chocolate Handsome has appeared in the distribution network.
Black beans and peas
Black beans stand out with a special biochemical composition. 100 g of seeds contain 2 g of sugars, 1 g of fiber, 16 g of fat, 1 g of protein. In addition, it is a rich source of vitamins Bi (thiamine), Bo (folic acid), B? (riboflavin), Vz (niacin), Be, K and E. Grains contain essential trace elements such as calcium, iron, magnesium, phosphorus, potassium, sodium, zinc. Studies have also established a high content of catechins and other beneficial substances in black grains.
Black beans are a good nutritional component of the diets of overweight people, as well as some diseases of the gastrointestinal tract and diabetes. It is most common in Latin American cuisine, where it is used in meat and vegetable dishes, soups and soup mixtures, stews, salads, and fried. Beans have a firm, meaty texture that makes them popular among vegetarians.
The black bean variety is included in the State Register. The trade network also has seeds of the Purple Queen variety, which has proven itself as a supplier of anthocyanins. But the variety of bush beans with flat broad beans Metis is a novelty on the Belarusian market. Appeared on sale and sowing chokeberry varieties of peas (Purple Sugar).
Black Corn
Black corn came to us from South America. This plant is still a rare guest in summer cottages and household plots. In the specialized literature, and in Internet sources, information about it is scarce. According to nutritionists, such corn is more useful than its more famous relatives. Her grains are sweeter in taste, as they contain more protein rather than starch.
They contain salts of minerals such as potassium, calcium, iron, phosphorus, magnesium, etc. They are rich in vitamins PP, E, A, groups B and K, which are responsible for normal blood clotting, the state of blood vessels and the functioning of the circulatory system. Corn protein contains biologically active substances necessary for life - essential amino acids lysine and tryptophan. This product has an anti-stress and calming effect. Black corn is an excellent cleanser; it eliminates not only toxins and toxins from the body, but even radionuclides.
Unfortunately, both in Russia and the Republic of Belarus, and in other countries of the near abroad, research work on this culture is not being carried out in full. And there are no seeds in the wide sale. In order to get a full harvest in the conditions of central Russia and Belarus, early varieties are needed.

red cabbage
An important source of a whole range of nutrients is red cabbage. Some of its varieties are so saturated with anthocyanins that their leaves turn blue-black. The variety of red cabbage Topaz is early, with soft leaves without coarse fibers, which makes it indispensable for dietary salads that help with stomach ulcers and gastritis. A hybrid of red cabbage Example has an outer and inner purple color.

Juice from heads of dark-colored varieties of cabbage is an excellent healing agent. It is used to strengthen the body and fight various diseases (in combination with apple).
Other types of cabbage with a rich anthocyanin color have similar properties: Viennese blue kohlrabi, exotic Savoy Violacea di Verona, a new selection - Purple cauliflower with large heads of a very unusual color, as well as Redbor kale (kale) with dark purple, almost black leaves.
What's in the balance?
There are "black-haired" specimens in families of other types of vegetables. Varieties appeared on the seed market purple and purple-orange carrots. Such root vegetables contain anthocyanins, which add value to the product and make it very beneficial for health.
An important addition to the list of especially healing vegetables is beetroot varieties with a high content of betaine: Mulatto, Detroit, Cadet, Ataman.
In a variety of onions Carmen - maroon bulbs with a very high content of anthocyanins. This is an excellent tool for the prevention of influenza.
saturated dark green (almost black) fruits are produced by Jade squash plants. The highest concentration of chlorophyll in the young peel makes it an indispensable dietary food product.
There are also dark-colored options among green crops. So, varieties of basil Robin Hood, Dark Night have deep purple leaves, indicating a high concentration of antioxidants.
Of course, not all varieties listed in the article have been tested in scientific institutions, but it is advisable to test them in a summer cottage.

Salad of black tomatoes with Jerusalem artichoke
This salad, thanks to the use of non-traditional ingredients, has a very unusual and pleasant taste.
Required: 3 black tomatoes, 1 Jerusalem artichoke root (ground pear), 50 g lettuce, 50 ml olive oil, salt and pepper to taste.
We clean the Jerusalem artichoke from the peel and rub on a coarse grater or cut into cubes. Salt the resulting mass, pepper, add olive oil and set aside for 2-3 minutes. Cut the tomatoes into slices about 5 mm thick and put them on a plate. Place grated Jerusalem artichoke on top and decorate with lettuce leaves.
